today we have to prepare food for Deepavali theme. As usual we have to come to college early and wearing the full attire in front the kitchen. After entering the kitchen, Chef explain what we gonna to make today. We have to prepare for 30 pax.
Our menu today is Nasi putih, Assam Pedas Ikan Pari, Cencalok dan ulam-ulaman, Paratha with Dhall, Parakash Peria, Kari Ayam Berkentang, Aloogabi, Naan Bread, Laddu, Sev, Ikan Kari Boney Style and Sugarcane juice.
The ingredients
1 medium sized fish - cut and clean
2 small sachets of fish curry spices + 1 tablespoon of chilli powder (I use BABA'S)
1/2 tbsp of tamarind juice with 2 bowls of water (take the juice)
3 curry leaves
2 green chilies - cut 1 inch
2 teaspoons of halba plus
10 nuts
2 tomatoes - split 4
1 cup coconut milk
Mashed / sliced material:
1 inch ginger
3 cloves garlic
1 onion
Here's how:
1. Add the curry spice powder together with 1 tablespoon of chilli powder into a small bowl. Dissolve with a little water (slightly concentrated paste do not melt)
2. Heat oil, stir-fry the ingredients and mix well until it smells. Use a lot of oil for saffron and for health should use corn oil.
3. Add in curry spices, curry leaves and green chillies. Slow down the fire and cook until the spice breaks out and completely cooked.
4. Settle in tamarind and coconut milk, cook until boiling.
5. Add fish, salt and a little flavored powder (if desired). Let it boil. After that, add the stuffed beans and tomatoes and cook again until the sweety stuffy beans.
6. After cooking can be served with white rice

1. Firstly, put the ingredients that already blend in the hot pot.
2. Add water, daun kesum and daun kantan until it boiling.
3. Next add ikan pari and also asam keping.

5. Lastly, put air asam and season with sugar and salt.

2. Then, put the lada kering, daun kari, biji sawi and 1 tbsp of tumeric.
3. Wait until it break oil, next put the water, dhall, sugar and also salt.
Recipe : Parakash Peria
Ingredients :

2 cup rice flour
3 tbsp corn flour
1 biji telur
Air
1 tsp kunyit
1 tsp chili powder
1 pinch salt
1 pinch white pepper
Method :
1. Cut the peria into half.
2. Slice the peria nicely.
3. Soak the peria with salt.
4. Next , we do the batter for peria.
5. Add rice flour, corn flour, egg, tumeric, chili powder, seasoning and add water slowly.
6. Next combine the slice of peria with the batter and cook using deep frying.

2. Next put the blend ingredients bawang putih, bawang merah, bawang besar, serai, halia and lengkuas.
3. Next put rempah kari.
4. After that, put coconut milk, gula melaka, garam, gula and lastly put the chicken.
Recipe : Aloogabi
Ingredients :
1/4 vege oil
onion
1 bunch of coriander
1 small green chili
1 large cauliflower
3 large potato
2 nos tomatoes
Fresh ginger
1 tsp cumin seed
salt
2 tsp turmeric
Garam masala
Method :
1. Blanch the cauliflower and potatoes.
2. Saute the onion with the vegetables oil, also with the ginger, cumin seed and turmeric.
3. Next put all the vegetables.

Ingredients :
1 1/2 cup warm water
1 tsp sugar
2 tsp active yeast
1 tsp salt
3 cups flour
Method :
1. Put all the ingredients in a large bowl.
2. After that, rest within 1 hour.
3. Pan fried the Naan Bread with non stick pan without any oil.

Recipe : Laddu
Ingredients :
1 kg green bean flour
500 g wheat flour
500 g sugar
500 ml milk
100 g butter
1 tsp essence vanilla
1 tsp ground green powdered cardomen
1 tbsp cashew nut
Food coloring
Water
Oil for frying
Method :
1. Firstly, strain the green bean flour, wheat flour and add sugar also water.
2. Then, put the milk slowly.
3. Add essence vanilla.
4. Add the ground green powdered cardomen and also add the cashew nuts.
5. Lastly, add yellow color.
6. Cook the Laddu in deep frying.
Recipe : Sev
Ingredients :
1 cup besan flour
1/4 tsp black pepper powder
Salt
1/4 tsp turmeric powder
1 tbsp hot oil
1/4 cup + 1 tbsp water
Oil for frying
Method :
1. Firstly, combine the besan flour, black pepper powder, turmeric powder and also salt. Mix it well.
2. Add hot oil also also water . Mix it again.
3. Using sev mold insert the dough then fry the dough using sev mold.

1/3 cup mild korma curry paste
1 1/2 cup dried lentil

1 1/2 L water
270 ml coconut milk
200 g spinach leaves

Method :
1. Firstly, saute the onion, fresh ginger, garlic, turmeric, and mild korma curry paste.
2. Next, add water.
3. Then put the dried lentil.
4. Then put the coconut milk, spinach leaves.5. Lastly, season with salt and pepper.

1. Masukkan bahan-bahan yang sudah di kisar.
2. Masukkan daun kari, biji halba, biji sawi, tomato, serai, cili merah.
3. Masukkan rempah kari ikan dan rempah kari ayam daging. Tggu sehingga pecah minyak.
4. Selepas itu, masukkan air dan juga ikan.
5. Masukkan garam dan juga gula.
6. Akhir sekali baru masukkan santan.
